Souvenirs for our Wedding


Went to the city to have some of the souvenirs engraved! and i was just too happy to see how beautiful it turned out... Btw, for our ninangs, i've opted to give them a pair of buffalo horn serving spoon. The writing added a more personal touch to it. Paolo and i just love food! so we both decided to have this for our ninang:) (I love to cook, he loves my cooking!)



And for our ninongs, we chose a lacquer coaster. All our souvenirs were bought here in VN, since we both are based here.


And for our guests, we have a fridge magnet of a vietnamese wedding couple wearing the traditional costume of VN



















and an embroidered organza bag. . This is what they wear on very special occasions such as a Wedding!

Beef Lasagna

Had a low key early Christmas party yesterday (Saturday) with the rest of the peeps here in Saigon. Nilo arrived from Manila unexpectedly *wink* so we have decide to make the most of the weekend! It will only be 3 weeks and 2 days until the big day and so we are all excited to be back home for christmas and the wedding too.

I cooked beef lasagna since I promised Paolo that i will make one for him before we leave for Manila. Tet bought in some fried chicken and Tynne chose to have some cakes from Sheraton.

Below is my recipe for beef lasagna. All the while, i thought that it so complicate to make one but, i was wrong!! it was very easy!! try it!



INGREDIENTS: ( there's no exact measurement, i adjust it to my taste)
* 1/2 minced beef
* 500grams pack bacon/ham
* 1 pack ricotta cheese
* 2 eggs
* 1 can tomato in halves
* 2 packs grated mozzarella cheese
* lasagna pasta sheets
* 2 packs spaghetti sauce (i use del monte)
* 1 small pack tomato sauce
* 1 clove garlic, minced
* onion
* chopped fresh parsley
* salt to taste

COOKING INSTRUCTION:
1. Saute onion and garlic until cooked, add in the minced beef until golden brown.
2. Then add the bacon/ham, a pinch of salt and pepper.
3. Put in the canned tomato and saute until well blended. Add in the spaghetti and tomato sauce.
4. Bring to boil. add the chopped fresh parsley,salt and pepper to taste.
5. Set the sauce aside.
6. In another bowl, mix in the ricotta cheese and the eggs.
7. Put a serving spoon full of sauce in the pan and line it with the lasagna sheets. Put another serving of sauce, mozzarella cheese and the ricotta mix. (Layering - lasagna sheets - sauce - mozzarella - ricotta mix, a sprinkle of parsley)
8. Continue until you have 4 layers (depends on the size of the your baking pan.
9. Bake in the oven for about 20 minutes covered with foil in 200degrees. And uncovered for another 5 minutes or until the top most layer is golden brown.

BISV International Week (6th Year)




We celebrated International Week at school this morning and it was really good... I loved the songs we sang and was impressed with the amount of beautiful, interesting and colourful costumes... Despite of the lesser number of students in my class, i think we enjoyed every minute of it...

Latest addiction

Hahahahaha.... nakahanap na naman ako at si tet ng pagkakaabalahan! ito ang sinasabi ni paolo na meron na naman kaming paglalaruan sa bahay. lagi nya sinasabi na naglulutu-lutuan kami ni tet!!:)

Last weekend, Tet and I tried to bake banana muffins! We didn't realise that it was so easy, no frills baking! In a span of 30-40 minutes we have freshly baked home made banana muffin.

Here's the recipe

1 cup sugar
1 egg
1/2 cup vegetable oil
3-5 ripe bananas mashed
2 cups flour
1/2 tsp baking soda
1 tbsp vanilla extract

(Preheat the oven at 175-200 celsius)

1. Beat the egg and mix in the sugar and vegetable oil until the colour turned light yellow.
2. Put in mashed banana and flour and mixed until well blended.
3. Add in the baking soda and vanilla.
4. Spoon in to greased muffin tins and bake for 30 minutes (175-200 celsius) until toothpick poked comes out clean.

ENJOY!!! pair it with hot tea and milk for an afternoon snack!!

Blueberry... Where are you?

It was Paolo's birthday yesterday... And we're going to celebrate it tomorrow! I'm going to prepare dinner for him and a few friends...

And the menu will be

* Tomato and basil bruschetta
* Mixed green salad
* Lasagna
* Steak or chicken (can't decide yet)
* Cheesecake for dessert (preferrably blueberry)

But where the heck are canned blueberries in Saigon!!!!!!????????????

Moon Festival at BIS Vietnam


We just celebrated Moon festival (Early Years style)! And it was really good!
Children were all wearing a traditional vietnamese costumes and teachers had their fair share of the lime light with all the colourful "aodai's" they are wearing! (except me and tet who opted to wear "chiong sam".






Ang pagbaha ng moon cake!



Nakakatuwa panoorin yung mga bata habang sila ay excited na maghalo ng ibat-ibang ingredients para sa aming version ng moon cake. Nagkaroon kami ng chance gumawa nito, kasi dahil nga sa kaunti ng students namin. So yung klase si Tet pati klase ko ay nagsama ng lakas :) hehehe... para sa aming moon cake/scone/cookie...
Lahat sila excited matikman, hindi pa nga namin naibabake eh gusto na daw nila kainin!! Kaya naman nung matapos, eh lahat sila enjoy! In fairness, masarap sya!! kahit kami ni tet eh nagenjoy at plano pang gawin sa bahay!!:)

Moon Festival ulit


Kami ay busy sa pagaasikaso ng aming nalalapit na Moon Festival celebration sa Thursday.


At eto kaming 2 ni Tetet habang nagpipinta ng banner... wala na kasing mga estudyante:) heheheh...


At eto naman ang aming mga Vietnamese assistants habang gumagawa ng parol...!!!

This time, it's different....

I have been working as a preschool teacher for 6 years now and for the past 5 years i always have had 20 students at the beginning of the year....

But this year, its different...


I always have been complaining (only to myself) how hard it is to see 20 crying children on the 1st day of school...


But this year, its different...


For the past 5 years, i have been asking why all my students talk so much... and why can't they just stop when you say so... or why can't they stop asking too many questions....


But this time, it's not like that... Because i only have...
8 children...!!!!

I'm so excited



Sobrang excited ako, hindi ko maexplain! When i received an email from my sister saying that our wedding invites are ready for pick up, i became too excited for the wedding. What more when my brother told me that he has received the marriage license which pao and i have worked hard applying for.... So i told myself, that "yes, indeed im getting married!"




ganito pala ang feeling:) nakakaexcite, na nakakapagod, na nakakakaba!! ewan, pero overwhelming talaga! kahapon, after namin magsimba, pao and i went to a shop to ask for his suit. he has finally decided, that he will wear a suit! we'll have it made here, kasi wala na kaming time paguwi ng manila. we also were thinking of buying our wedding bands yesterday but the jewelry shops were closed:( so we'll have a look again next week.




i just want to share my wedding invites and my wedding gown to everybody!! had a lot of time over the weekend to take photos
and upload them in my laptop.
