Dinner: Lumpiang Shanghai (Filipino style Spring Roll)

Before my mum came here, I usually do my grocery and food shopping at Lottemart. It is a huge shopping/supermarket here in D.7 where you can buy most of the things you need in the house. However, the quality of the fresh meat and especially seafood are incomparable to what you can buy at the local market. Back home, we normally buy produce from the local market because of the abundance and the freshness. Since my mum is here, I know she'd rather wake up early in the morning to visit the local market here. We have been doing this for almost 4 weeks now and I can say that i am very happy with what we have bought so far.

This morning, i found "lumpia"(spring roll) wrapper!:) I may sound weird to other people since VN is very popular with all variety of spring rolls in the market. But if you are used to frequenting the supermarket, you are aware that you cannot buy this particular wrapper there. So when i saw this in 1 of the stalls, i immediately told my mum that we are going to have "lumpiang shanghai" (Pinoy's version of spring roll) for dinner!


This is a no-fuss recipe that i learned from my mum which I actually enjoy preparing every time!:)

Ingredients:
* 1/2 minced pork
* 1 tbs minced garlic
* 2 eggs
* chopped spring onion
* salt and pepper to taste

* Mix all the ingredients together and sit for about 10 minutes to make sure the flavor blends well.
* Put a teaspoon of the mixture onto the wrapper and simple roll it.
* Fry until golden brown!
